NECTAR - aN Eu Curriculum for Chef gasTro-engineering in primAry food caRe

The NECTAR project addresses the mismatch that has been identified between the skills currently offered by cooks and chefs working in hospitals, residential care, and home care and those that are required by health care institutions, private service providers, and end users in order to play a central role in primary food care (PFC).

Based on an “integrated culinary/clinical approach,” NECTAR will provide a European professional profile for Chef Gastro Engineering (CGE) and a European curriculum for certification of this profile. The Chef Gastro-Engineer (CGE) will be an innovative and central figure in PFC, experienced in food management and kitchen coordination, able to respond to end-user needs, such as head spoilage/alterations, swallowing and chewing problems, by customizing recipes and cooking processes; the CGE will have the technical skills to use various ICT tools for home monitoring of the elderly and personalization of care.
